  1. Preheat oven to 160C.
  2. In a bowl mix together the almond meal, 1½ tbsp icing sugar, almond extract, butter (softened) and salt until it forms a dough.
  3. Add in the finely chopped nuts and mix.
  4. Divide the dough into 8 equal portions.
  5. Take one portion of the divided dough and roll it into a log between your palms. Press gently in the centre with your thumb to shape into a crescent. Don’t overwork the dough, the warmth of your palms can cause the butter to melt and make it harder to handle.
  6. Place in a lined baking tray (1″ apart).
  7. Bake for 20 mins (or until golden from the top).
  8. Let cool and then dust with the remaining 1½ tbsp icing sugar.
