It’s close to the end of summer and the watermelons are at their absolute sweetest! I just had to try this recipe before winter comes by. It was so crunchy and refreshing, and the addition of quinoa made it filling as well. Hope you give it a try!

  1. Cut all the vegetables and watermelon to roughly an equal size.
  2. Prepare the dressing by mixing lime juice, olive oil, honey, salt, cracked black pepper, lime zest and red pepper flakes.
  3. Drizzle the dressing over the salad and toss to coat evenly.
