  1. Prep the salmon by removing the skin and bones, if any.
  2. Cut the salmon fillets into 1-” cubes. Add the teriyaki marinade, mix well, and set aside for 30 minutes. I use store-bought (Ayam’s Teriyaki marinade).
  3. Toast the sesame seeds in a dry pan over high heat until golden. Set aside.  
  4. Bring a large pot of water to a boil and add some salt. Add the soba noodles and cook on high heat for about 5 minutes (tender but not mushy). Immediately drain and run under cold water to stop the cooking process.
  5. In a serving bowl, mix vinegar, soy sauce, honey, and sesame oil. Add the spring onions and noodles. Toss to combine. 
  6. Add sesame seeds and red chili flakes. Mix well. 
  7. Add cooking oil to a medium frying pan and cook the salmon pieces on medium heat for 4 mins on each side. I like to lightly char the salmon’s outer skin. Rest for 2-3 mins.
  8. Serve the salmon on top of the noodles.
