  1. Prepare the egg mix by beating all ingredients together.
  2. Heat a tap of oil in a small frying pan and sauté onions and tomatoes till the onions are translucent (but not brown) and the tomatoes skin bursts.
  3. Add the capers and cook for 1-2 mins.
  4. Even out the veggies in the base of the pan. Top with cheddar cheese and let it melt (leave the heat off).
  5. Pour the egg mix over the veggies so that the veggies are all submerged.
  6. Place salmon evenly in the egg mixture.
  7. Bake in a preheated oven (200C) for 12-15 mins or until the eggs are cooked (your knife should come out clean).
