  1. Thinly slice garlic and ginger. They should be in 1:1 ratio.
  2. Heat oil and fry garlic and ginger for about half a minute.
  3. Add mutton and fry on high flame until mutton changes colour.
  4. Add the fried onions and salt. Mix.
  5. Now layer these on: onions, red chilli, peppercorn, clovers, cinnamon, yogurt (whip before adding). DO NOT MIX.
  6. Cover and cook on low heat for 45 minutes (until meat is tender).
  7. Garnish with green chillies and coriander leaves.
