  1. Remove seeds from the tomatoes and cut into chunks.
  2. Roughly chop the garlic, chilli, onions, and coriander leaves.
  3. Put everything into a food processor and pulse in 2 second bursts until all ingredients are chopped. Don’t over process the mixture, you want it to still have texture and not be a puree.
  4. Refrigerate until ready to use.
