  1. Thinly slice the onions.
  2. Chop the tomatoes into small pieces.
  3. Chop the potatoes into medium-small pieces.
  4. Wash and soak the rice in water for at least an hour.
  5. In half cup of hot oil, fry the onions till golden brown. Strain and set aside.
  6. Add mutton and fry for 1 minute on high flame, stirring constantly.
  7. Add half the fried onions, coriander powder, red chilli powder, garlic-ginger paste, ½ tsp salt, and turmeric powder. Mix well.
  8. Cover and cook on low flame for 30 minutes – till the meat is half done.
  9. Add tomatoes and potatoes and cover and cook on medium heat until the mutton is tender.
  10. Beat yogurt and add to the meat. Stir well.
  11. Drain the rice and add to the meat. Stir well.
  12. Add enough water so that it is about 3/4″ above the level of the rice.
  13. Add 1 tsp salt and mix well.
  14. Bring to a boil and then cover and cook on low-medium heat for about 15-20 minutes.
  15. Check on the rice. If the water has almost completely dried up, reduce the flame to low and cover and cook again till the rice is done.
  16. Remove from flame and garnish with coriander leaves.
