  1. Preheat oven to 175C.
  2. In a medium bowl mix 1 cup sugar, flour, baking powder, and salt.
  3. Add milk and mix.
  4. Add melted butter and whisk until smooth.
  5. Pour into the baking pan and scatter blackberries on top.
  6. Sprinkle ¼ cup sugar on the top.
  7. Bake until golden and crispy on the top (about 50-60 minutes).
  8. When you have 10 minutes remaining in baking time; i.e. the topping is just starting to turn golden; sprinkle the remaining 2 tbsp sugar.
  9. Serve warm with vanilla ice cream or whipped cream.
