My nephew made these pancakes using my original pancake recipe and added some frozen blueberries to them. He got a bit heavy-handed with the stirring and the pancake batter turned blue. Thus were born Smurf Pancakes! 🙂 

Directions

  1. Combine all dry ingredients.
  2. Make a well in the centre of the mixture.
  3. In a separate bowl beat the egg. Add milk, oil and vanilla essence.
  4. Pour the egg mix in the dry ingredients and mix well. The batter should be slightly lumpy. Let the batter rest for 15-20 minutes.
  5. Add the frozen blueberries and mix well.
  6. With a Â¼ cup measure pour batter into a lightly greased frying pan. Cook over medium heat for about 2 minutes on each side (or until golden brown).
