  1. Mix together the dry ingredients.
  2. Add water and yogurt and kneed to form a dough. The dough should be smooth and sticky, but not wet.
  3. Leave the dough for 3-4 hours (proof periodically).
  4. Pre-heat oven to 180C.
  5. Make dough balls and roll into ¼” thick rotis.
  6. Top with ghee/butter, garlic, mint and coriander leaves, and sesame seeds.
  7. Bake for 20 minutes or till done.
